Mac ‘n’ Cheese

10 Minutes – Serves 4 – Vegetarian

Ingredients

  • 300g macaroni
  • 30g butter
  • 25g flour
  • 500ml milk
  • 1tsp mustard, or to taste
  • Salt and pepper, to taste
  • 200g mature cheddar, grated

Instructions

Preheat the oven to 180°c.

Cook the macaroni in a pan of boiling water until it’s just underdone, draining it a couple of minutes earlier than you would usually. Retain a little bit of the cooking water.

While the macaroni is cooking, make the cheese sauce. Melt the butter in a medium-sized pan on a low heat. When the butter is foaming, add the flour and stir until it’s mixed in. Continue cooking for 2 minutes, stirring frequently.

Very gradually add the milk, stirring constantly. Make sure each bit of milk is incorporated before adding the next bit. If you do this slowly on a very low heat, you should end up with a perfectly smooth sauce with no lumps and no need to whisk. However, if it does go wrong for some reason, you can always use a whisk to beat out the lumps.

When all the milk is incorporated, add the mustard, salt and pepper. Then add half the cheese, stir to combine and turn off the heat.

Tip the pasta and a couple of tablespoonfuls of the cooking water into the cheese sauce and stir until completely coated.

Pour the macaroni cheese into a shallow ovenproof dish and sprinkle over the remaining cheese. Bake in the preheated oven for 10 minutes until golden and bubbling, then serve with lashings of Henderson’s Relish.

Henderson’s Burger

Henderson’s Burger

15 minutes – Serves 2

Ingredients

For the Hendo’s caramelised onions

  • 2 large white onions
  • 3 tbsp unsalted butter
  • 1 tbsp fine brown sugar
  • 2 tbsp Henderson’s Relish
  • Salt and pepper

For the Burgers

  • 400g good quality minced beef
  • 100g onion, finely chopped
  • 1 tsp tomato ketchup
  • 1 tsp English mustard
  • 1 tsp Henderson’s Relish
  • 1 tsp dried mixed herbs
  • Salt, to taste

To serve

  • 2 burger buns
  • Vine tomatoes, sliced
  • Rocket or other salad leaves

Instructions

FOR THE HENDO’S CARAMELISED ONIONS

Peel and halve the onions before thinly slicing them. Add the butter to a large pan, and when melted add the onions. Sauté until soft, then add the sugar and Henderson’s Relish. Cook for a further 30 to 40 minutes, stirring occasionally until the onions are a dark brown colour and have a slightly jammy texture. Season to taste with salt and black pepper, then cover and keep warm until needed.

FOR THE BURGER

Heat a little oil in a frying pan over a medium heat, then sauté the chopped onion until softened. Put this into a bowl with all the other ingredients and mix to combine. Using your hands might be easiest for this. Divide the mixture in half and shape the pieces to form two patties.

Fry the burger patties in the same pan over a medium heat with a little oil for 3 minutes on each side, or until cooked to your preference.

TO SERVE

Serve the burgers topped with Hendo’s caramelised onions in the buns with accompaniments of your choice. We’ve added sliced vine tomatoes and fresh rocket with extra onion rings.
